Cheeseburger Pie



First of all, I had a few people ask about the cupcake stand.... I received it from my lovely mother, who, got it at TARGET.  I 've also seen them at Wal-Mart in the cake decorating section. 

 And now for the cheeseburger pie, which I was thinking would be so cute done in a muffin pan and put on this cupcake stand for dinner.  OK, really here's the recipe...




1 lb lean ground beef

1 large onion, chopped (1 cup)...my husband hates onions, so I use onion powder tastes the same.

1/2 teaspoon salt

1 cup shredded Cheddar cheese (4 oz)

1/2 cup flour

1 tsp baking powder

1/2 Tblsp butter-soft or shortening

1 cup milk

2 eggs


1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.


2.In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Spread in pie plate. Sprinkle with cheese.

3.In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.

4.Bake about 25 minutes or until knife inserted in center comes out clean.



(Rachael's boyfriend Zach, just for future reference, who obviously likes Cheeseburger pie, and who my son STALKS... seriously, he loves this guy...he named one of his action figures Zach!)


           
                                        Eat and enjoy...I'm pretty sure anyone likes this stuff!!!

It WOULD be cute served as muffins on that stand. What a great idea. Your kids would absolutely love it.
